Fish

Hey guys! Hope everyone had a great weekend! I think my cold is finally starting to go away! My dad went out in the boat this weekend and got lots and lots of fish, so that's what we had for dinner last night! We decided to let our creativeness get the best of us and try new ways to cook the fish and played around with different seasonings and it came out really good! Check it out! I would have to say my favorite was combo #3!

Meatloaf

Being sick for a week I haven' t really been eating a lot, but last night I decided I needed something really filling so I decided to go with Jon's mom's meatloaf recipes! It is one of my favorites and is really simple! It came out really yummy and there are plenty of leftovers! yey! When I first started to make it, I forgot to take pictures, so here is what I got! I guess I was a little too excited to get in the kitchen and make it right after my 4 hour nap!
Mix up ground beef, bread, salt, onion, and thyme in one bowl...

mix up eggs, milk, ketchup, and mustard in another bowl....

get a baking pan

all mixed up

preheat oven to 400 degrees

form mixture into little loaves

smother with ketchup....(I'm a big ketchup fan, can you tell?)

bake for 45-55 minutes

yum yum!

we had some corn on the cob to go with it!

gotta love having cob nobs!

and there it is! Yum!!

Escarole and Beans

I got this recipe yesterday from my cousin Dawn, and I just had to try it right away for a few reasons! First of all because it used to be one of my favorites as a child, secondly I am sick and it sounded like it would just hit the spot, and third because it is really easy and quick to make, and lastly, I just had to finally use my new kitchen! :) So here is goes!
Here's the recipe, its simple, takes about half an hour or so!

Everything you need!

saute, but don't brown the onions and garlic!

Mix the rinsed beans, chicken broth, and onions

let it simmer

cut the escarole

add in the escarole

chop up the pepperoni, either this kind or a stick of it! (The store was out of all but this one!)

Mix in the pepperoni

and serve!

Bread makes a great side dish, however that was what we forgot at the store so we used hot dog buns!

NEW KITCHEN!

Ok, so I have definitely been MIA the last few weeks! Sorry! I will make up for it, I promise! We have been moving and I have been sick! But, we are finally all moved and settled it, and I have an actual kitchen now! Yey!! I have not had a chance to cook in the new kitchen yet because of all the chaos of moving and me being sick and lazy, (Hopefully tonight I will get to cook!) I have some amazing new recipes I can't wait to try out! :) While I keep you in suspense about the recipes here are some pictures of the new house, and more importantly the new kitchen!
